The earliest known record of the family’s involvement in winemaking dates back to 1598, as evidenced by a family coat of arms still proudly displayed in their cellar. The estate experiences a continental climate, characterized by long, scorching summers that can exceed 35 °C, and cold winters with temperatures dropping below zero. With over 2,500 hours of sunshine annually and limited rainfall (roughly 300 to 350 mm), the climate plays a key role in shaping the vines' resilience and the grapes' intense concentration.
The soils vary from sandy loam and limestone to clay and stony terrain. These poor, well-drained soils force the vines to reach deep for nutrients, resulting in grapes with complex character and structure. The family’s vineyard practices are sustainable and regenerative, focusing on natural soil enrichment, minimal intervention, and biodiversity. By working with nature rather than against it, the winery preserves the integrity of the land and the authenticity of its wines.
A Return to Ancient Techniques
One of the most distinctive aspects of Romero de Ávila Salcedo’s winemaking is its use of clay amphorae for fermentation of their Portento range. This technique dates back thousands of years and was used by ancient civilizations across the Mediterranean. Luckily, the winery has been one of the few in modern day to successfully revive this method, which creates wines that are both modern and deeply respectful of historical tradition.

Ana y Clara is named after and inspired by the winery’s two granddaughters, Ana and Clara, who represent youth, promise, and the new generation of the Romero de Ávila family. Just like its namesakes, the wine is vibrant, modern, and full of life.
With aromas of green apple, lemon zest, white flowers, and brioche, Ana y Clara has a fine mousse and refreshing acidity. It’s a graceful aperitif and an ideal companion to oysters, creamy cheeses, and celebrations of all kinds.
Testigo Autor: A Testament to Generations
Another standout from the winery is Testigo Autor, a wine that blends heritage, storytelling, and craftsmanship. The name “Testigo” translates to “witness” in English, and this bottle is a tribute to the generations of family members who have been witnesses to the transformation of the land, the vineyard, and the wine itself.
Crafted from Tempranillo, Syrah, and Garnacha Tintorera, Testigo Autor is fermented in amphora and then aged for 20 months, giving it a well-integrated structure and complexity while preserving fruit purity.
The result is a deep, expressive red with notes of blackberries, licorice, red cherries, and warm spice, balanced by polished tannins and a long, elegant finish. It is a wine of memory and presence, perfect with slow-cooked meats, grilled eggplant, or a generous plate of jamón ibérico.
